Hasselback Potatoes

This is a Swedish recipe called Hasselbackspotatis (Hasselback Potatoes) and they look so good they are bound to impress they are a very easy way to bake potatoes in the oven and go well with roasts, steak, chops, and chicken.

We used to serve these at some dinner parties when we wanted to impress the guests with a different style of baked, roast potato, sometime we used to top them with fresh herbs or even grated cheeseHasselback Potatoes 1

Serves / Makes:         6 servings

Prep-Time:                 10 minutes

Cook-Time:                30 to 40 minutes

You Will Need

6 medium, potatoes, washed, scrubbed and cleaned

3 cloves garlic, thinly sliced

2 tablespoons, olive oil

30 grams, butter

Sea salt flakes

Freshly ground black pepper

Method

Preheat the oven to 220C/425˚F; put the potatoes on a chopping board, It helps to first cut a thin slice off the base of the potato so that they sit evenly and then place two knives or forks on either side of the potato this helps by stopping you from cutting all the way through the potato.

Starting from one end of the potato cut almost all the way through, at about 3 to 4mm intervals.

Arrange the potatoes in a baking tray and insert the garlic in between the slits, put some butter on top of each potato and then drizzle the olive oil over the potatoes and sprinkle some sea salt flakes and freshly ground black pepper over them.

Bake the potatoes for about 40 minutes or until the potatoes turn crispy and the flesh are soft.
