An easier and fruitier alternative to mince pies
We first started making these last year after seeing Gordon Ramsay making them, we have of course tweaked them since then with the addition of cranberries, apple and brandy and we think they are superb.

Cook-Time: 20 to 25 minutes
You Will Need
2 sheets of ready made, ready rolled puff pastry
1 x 400 gram jar of mincemeat, we like to use our own or the luxury kind from M
Finely grated zest of 1 orange
75 grams, dried cranberries
1 apple, peeled and diced
2, tablespoons, brandy
Oil, to grease
1 egg, lightly beaten for egg-wash
Icing sugar to dust
Method
Preheat the oven to 220°C/450F/Gas 7.
Mix together mincemeat, orange zest, apple, cranberries and brandy, unroll one sheet of pastry onto a lightly floured work surface, with a short end facing you, spread over half mincemeat mix, leaving a 1 inch border along the short edge furthest away from you; brush this pastry edge with egg.
Roll up the sheet of pastry from both ends, so that they meet in the middle, repeat for the second sheet of pastry and place in the fridge to chill for 30 minutes, then slice into ½ inch thick pieces place the slices onto greased baking sheets, we tend to use silicone baking sheets now so much easier and guaranteed not to stick, and place in the oven for 10 to 15 minutes, or until cooked golden brown and crisp, place onto a wire rack to cool when cool dust with icing sugar.
